I sympathize completely with you. I only have a little eczema
on my hands, mainly my left (of course I am left handed :-p)
but I also have Crohn’s Disease, which the last few years
has really only responded to treatment by altering my diet
a huge amount.
I avoid many of the things you mention too: milk products,
wheat products, refined sugar. I have also lessened my acid
intake a great deal: no tomato sauces, carbonated sodas, alcohol.
I also eat almost no red meat.
Now, to be fair, I cheat a little, in a way. I am militant
about not eating somethings so I can still enjoying a good stout
or wine ocasionally as well some good chease.
In the course of all this, I’ve discovered alot of alternate
grains: spelt and kamut being the biggest. Likewise I tolerate
goat and sheep milk products very well. I’ve also been trying
out some red meat substitues like bison and ostrich. These
seem to be much easier on me than red meat from cattle.
Also, as I think someone mentioned and you said you had tried
and disliked, many Mediterranean/Middle Eastern/Indian dishes
are very yummy and low on the things I need to avoid. I recently
discovered Ethiopian cuisine too, it is delicious.
My point is: don’t despair. You need to make a change, but
that doesn’t mean you have to eat cardboard. I used to eat huge
amounts of cheese and sodas and a fair bit of red meat. But
I’ve changed my diet almost completely and am having great fun
discovering new foods!
